Paleo Cinnamon Bun Muffin Recipe

I have been on the biggest mission to make healthy, yummy Cinnamon buns. I love everything cinnamon buns. Serioulsy they are amazing, but you just can't find anything healthy and yummy, so I wanted to make my own.

Now, This recipe took me so many tries it wasn't even funny. Yes, I completely lost count. I tried different flowers, different amounts of baking soda, cinnamon, etc. It took quite awhile for me to get this one just right. I wanted if fluffy not dense and flat like most paleo recipes. I wanted it sweet and a nice cinnamon flavor, but not fake sweet. I guess you can call me picky ; )

Eventually I got it just right. You guys these are a must! You can even make them into doughnuts if you have a doughnut pan.

This recipe makes 12 muffins.


For Muffins:

  1. 3/4 cup coconut flour
  2. 1 cup almond flour
  3. 1/2 cup maple syrup
  4. 4 large egg
  5. 1 tsp baking soda
  6. 1 Tablespoon cinnamon
  7. 3 Tablespoons creamy almond butter
  8. 1/2 cup coconut milk (full fat) - or any milk of your choice.

For Frosting:

  1. 6 Tablespoons coconut butter, melted
  2. 1 teaspoon vanilla]
  3. Stevia drops to taste (or 2 Tablespoons of granulated sweetener of choice.)


For Muffins:

  1. Preheat oven to 350 degrees
  2. Prepare muffin pan by spraying muffin cups of a 12 cup muffin pan with coconut oil spray
  3. Add all ingredients together and whisk until smooth
  4. Scoop batter into the prepared muffin pan. Fill each cup until it is about 3/4 full. Sprinkle with more cinnamon if desired.
  5. Bake for 18-20 minutes or until the tops of your muffins are set and a toothpick inserted into the center comes out clean. (Note: You can make the frosting while waiting for the muffins to bake in order to save time).
  6. Allow muffins to cool for about 10 minutes. Remove from muffin pan.

For Frosting:

  1. Add all ingredients in a bowl and mix until smooth
  2. Add to the top of cooled muffins
  3. Serve!
