A super yummy, healthy breakfast, the Berry madness protein oatmeal recipe!

I am in my postpartum journey and really trying to do a few things:

  1. Eat healthy

  2. Get enough protein in to build muscle

  3. Make sure I am doing everything for baby and milk production

  4. Keep up my postpartum recovery

Eating this for breakfast and/or lunch has been helping me in this journey. It helps me eat my protein and is super yummy as well. You see, in order for me to eat I really need to enjoy my food. I am not one of those people that can just have bland food. I need good, yummy food. If it isn’t good I seriously don’t see the point in eating it. I know I know ‘food is fuel’, but who says that it can’t be tasty along the way right?

The thing I love most about this recipe is it really does taste like a hot blueberry muffin! You have to be a bit careful though. If you microwave the blueberries, they will become hot lava and burn your tongue. Most of the time I will cook my oats first, put my blueberries in the oats, and then microwave for another 10 seconds. This way the blueberries get warm but not too warm.

Berry Madness Protein Oatmeal Recipe - Protein Oats Breakfast

Ingredients:

  • 1/2 cup Oatmeal

  • 1 cup water or milk (depends on how thick you want it. I use water)

  • 1/2 scoop of vanilla protein powder

  • 1/4 cup blueberries

  • 1/4 cup sliced strawberries

  • 1/4 cup raspberries

  • Toppings: Sliced almonds (or nut of choice), additional berries, honey or agave syrup, and cinnamon

Directions:

  1. Add oats to a bowl

  2. Cover with water

  3. Put in the microwave for 1 minute - If there is still water add 15-30 seconds until oats are cooked

  4. Add vanilla protein powder and mix well

  5. Add berries and mix

  6. Top with berries, sliced almonds, agave syrup, and a dash of cinnamon

Serving Size: Makes 1 serving
