Dehydrated Cauliflower Popcorn Recipe - Dehydrated Vegetable Chips

I am on a mission to create the best dehydrated vegetable recipes!
Why you ask? Well, a few different reasons.
First of all I suck at eating vegetables. For the majority of society we don’t eat all the vegetables that we are supposed to yet they are so good for you. Now, I am definitely a snacker and love chips, so I thought it would be perfect to dehydrate vegetables in order to make my very own vegetable chips! This way I calm down on all the cheese Dorritos and can actually snack on something healthy.
The second reason is for hiking and backpacking. I want to be able to snack on something yummy, nutritious, healthy, and “clean eating” rather than something store bought with a ton of weird ingredients that you can’t even pronounce
The last reason is for you! Yep YOU! I want to be able to provide you with the same recipes to help you along your adventures :)

Now lets get started with making our Cauliflower popcorn!
Dehydrated Cauliflower Popcorn Recipe
Ingredients
1 head cauliflower
3 tbsp coconut oil
4 tbsp hot sauce of our choice
I use Sriracha
1 tsp paprika
1 tsp smoked cayenne (optional. I do not use this because I can’t handle the heat)
1/2 tsp ground cumin
Things you will need to make Dehydrated Cauliflower Popcorn
Dehydrator Directions:
Using a very sharp nice (I use this one) , slice your cauliflower into large popcorn size pieces. You can also just use your hands if you want.
Note: you want the pieces to be slightly large. When you dehydrate them they will shrink drastically .
Place the cauliflower in a large mixing bowl. Toss with all ingredients
Once thoroughly covered, place in a single layer on your dehydrator trays.
Dehydrate chips at 135°F for 8 to 12 hours, until light and crisp. Let cool before packing in resealable plastic bags or glass jars.
Oven Directions:
Heat oven to 250 degrees
Using a very sharp nice (I use this one) , slice your cauliflower into large popcorn size pieces. You can also just use your hands if you want.
Note: you want the pieces to be slightly large. When you dehydrate them they will shrink drastically .
Add all ingredients into a bowl and mix until the cauliflower is evenly coated.
Spread cauliflower out on a cookie sheet
Bake in the oven for 60 minutes or until they begin to turn a golden brown. (check at 55 minutes.)
Makes 2 servings.
