Gosh is it hot!

The other day it hit 110 degrees. Let me tell you I don’t want to do hardly anything in this kind of heat especially cooking! First it makes the house super hot, second I just don’t want hot food, and third I’m never very hungry when it gets this hot in the Summer. So I have a few recipes that I love when the temperature rises in the Summer.

So, what makes this recipe even better is you can use it as a dinner, an appetizer, lunch, or a snack! I mean recipes that can do that are seriously my favorites!

The other thing I love about this recipe is you can put it over a bed of lettuce, make a sandwich with it, eat it with crackers, or just eat it like it is! Talk about an awesome variety!

Now before we jump into the recipe here is what you are going to need to make it:

  1. A good Mixing Bowl:

  2. A sharp knife

  3. Mixing spoons

  4. Cutting Board



Now that we have all the essentials to make our Summer Chicken Salad lets dive into the recipe.

Summer Chicken Salad Recipe

Ingredients:

  • 2 cans of chicken

  • 1/2 chopped red onion

  • 2 celery stalks chopped

  • 2 pickles chopped

  • 1/4 cup mayonnaise

  • 2 tablespoons mustard

  • 1/4 teaspoon pepper

Directions:

  1. Wash all produce

  2. Chop pickles, onions, celery

  3. Add all ingredients to a bowl

  4. Mix well

  5. Taste test and decide if more pepper is needed.

  6. ENJOY!


This is seriously the perfect cold salad for hot summer days where you just dont want to cook. You can also prep this for a hike and have it as a yummy lunch.
