So funny thing is I never really liked french toast. I always wanted to like it, but I never did. We even used to put powdered sugar on the french toast when I was growing up and I still didn’t like it. I mean weird right?

Well, a few years ago I was trying out a diet and I was determined to test every recipe. Even the ones I knew, or thought I knew, I wouldn’t like. One of those recipes was in fact french toast. Ya, I wasn’t excited, but I told myself I was going to try it and I am so glad I did.

To my surprise I loved it! It has now become a staple recipe and one of my go to Saturday breakfasts. I have modified the recipe quite a bit, and that is the one I am sharing today. If you want the original recipe you can find it in the Extreme Transformation Book. This is the book I was using for the diet I mentioned above.

Serves 2 Adults.

Ingredients:

  1. 1/2 cup cottage cheese

  2. 4 slices of your favorite wheat bread

  3. Splash of milk

  4. 1/4 tablespoon of butter

  5. 3 whole eggs

  6. 1/4 teaspoon cinnamon

  7. Agave Syrup

Directions:

  1. Pre-heat cast iron pan

  2. crack 3 eggs in a bowl

  3. add cinnamon on top of eggs

  4. add a splash of cinnamon to the eggs

  5. whisk eggs, milk, and cinnamon together

  6. Melt butter in pan

  7. Dip bread into egg mixture. Make sure to get both sides one slice at a time

  8. Add slices of bread to cast iron pan and cook until golden brown.

  9. Flip and cook until golden brown on second side

  10. Place 2 slices of the toast on each plate

  11. Top with 1/4 cup cottage cheese each

  12. Top with berries of choice

  13. Top with Agave Syrup

  14. Serve and enjoy!!!
