Corn Salsa Recipe
It is Corn on the cob time !!!!! Honestly I love corn on the cob. It is probably my favorite summer veggie. The other day I was at the store and the corn was 8 cobs for $1. I couldn’t pass that up so I bough 8 not really knowing what I was going to do with all of it, but I was going to do something.
I got home ans started boiling the cobs and it dawned on me. What about making a cold corn salad! Once the corn was completed I decided to start trying to make a cold corn salad. My thought was that I was going to make the corn salad and put it over a bed of lettuce for dinner.
Well, it totally worked, but….. I ended up loving WAY more as a corn salsa (and so did my hubby and babes).
So, what makes this recipe even better is you can use it as a dinner, an appetizer, or a snack! I mean recipes that can do that are seriously my favorites!

A good Mixing Bowl:
A sharp knife
Mixing spoons
Cutting Board
Delicious tortilla chips
Now that we have all the essentials to make our cabbage salsa lets dive into the recipe.
Corn Salsa Recipe
Ingredients:
4 corn on the cob
Canned jalapenos + the juice
1 chicken breast
1 lime for juice
1/2 red onion diced
1/2 cub of Tomato salsa and/or 4 fresh diced tomatoes
1 Avocado diced
salt
pepper
1 tsp avocado oil
Directions:
Wash all produce
Boil corn on the cob until cooked
while corn is boiling cook chicken in pan and slice into small chunks.
Let cobs cool and then shave corn off of the cob
Dice jalapenos, red onion, and avocado
Add all chopped vegetables into a large bowl
Squeeze lime juice into bowl
Add salt pepper
Add 1 tablespoon of Jalapeno juice
Add avocado oil (note, taste test first. you might like it better without the oil)
Mix well
Taste test and decide if more salt or pepper is needed.
