So, I am on a journey to eat healthy again. During pregnancy I wasn’t eating the best. Honestly, during the first trimester all I ate was either McDonalds or toast. That was the only thing that my tummy would allow.

From then on I had a hard time getting back to eating completely healthy and am not upset about it one bit. I allowed myself to eat all the things. I was obsessed with fruit, Chinese food, potato chips, and cookies. During my third trimester I started to eat ice cream every single night.

I told myself that once we had our baby I would get back on track. So here I am, trying new recipes, trying to lower my carb intake, get back to my pre-baby weight, and just get back to some good healthy habits again.

I tried this cauliflower steak once and am going to have this quite a bit I think. The cool thing about this recipe is that you can add whatever toppings you want to make it completely different every time. I think I am going to treat it like a pizza. Put different toppings on each time to make it a different meal! I am pretty excited to try all the different things. Italian Cauliflower Steak - Low Carb Dinner Cauliflower Recipe

Italian Cauliflower Steak - Low Carb Dinner Cauliflower Recipe by Bessie Roaming

Serves 2 Adults.

Ingredients:

  1. 1 head cauliflower

  2. 1/2 cup marinara sauce

  3. 6 slices of Salami or 12 slices of pepperoni

  4. Mushrooms

  5. 1 cup mozzarella cheese

Italian Cauliflower Steak - Low Carb Dinner Cauliflower Recipe

Directions:

  1. Wash cauliflower

  2. Slice into 4 steak sized slices

  3. Put on cookie sheet

  4. Top with marinara sauce

  5. Top with mozzarella cheese

  6. Add mushrooms and salami

  7. Bake at 375 degrees for 25 minutes or until cauliflower is tender.

    Note: Check steaks at 20 minutes to see if you can poke a fork through the cauliflower

  8. Serve and Enjoy!
