So I have to admit, once the cold weather and rain hits all I want is soup. Seriously I could have soup every single night throughout the entire winter. I started to wonder if this was just a me thing. Like am I a super weirdo? Naturally I had to do a pole on Instagram hahahaha. But really, I actually did and guess what…. just guess… each and every single person that voted said yes! They love soup in the winter! Yay!!! My mom makes the absolute best soups ever. Like ever ever. One of my favorite soups growing up was her potato soup. Now, she never measures anything. Like EVER. So, I had to get her to write the recipe for me. This was not an easy task but let me tell you it was worth it baby! Now I can share this super delicious potato soup recipe with you!

The best part about this soup recipe is this is one that was handed down from generation to generation getting perfected over the years hence the ‘grandmas recipe’ title ;)

Alright, I know… I am rambling. Let’s stop the chit chat and get into making this amazing potato soup!

Potato Soup Recipe

Serves 4-6 Adults.

Ingredients:

  1. 6 red potatoes

  2. 1/2 sweet onion

  3. 1 can of evaporated milk

  4. 2 cups of water (or just enough to cover the red potatoes to boil)

  5. 2 heaping tablespoons of flour

  6. 1 cube of unsalted butter

  7. salt

  8. pepper

Directions:

  1. Chop onion

  2. Chop potato’s into small chunks

  3. Place in pot and add water until potato’s are barely covered.

  4. Boil until potato’s are soft (test with a fork. when you can poke a fork through the potato easily you are good to go)

  5. Add evaporated milk.

  6. Add Butter.

  7. Stir, and simmer.

  8. Add Salt and pepper to taste

    To thicken the soup:

  9. Mix 1/4 cup of water and 2 table spoons of flower in a separate cup. Mix until clumps are gone.

  10. Add mixture to soup stirring constantly

  11. Boil for 5 more minutes.

  12. Turn stove off and let sit for 5 minutes.

  13. Serve and enjoy!!!

And there you have it my friends! The absolute best potato soup I have ever had. This is my mama’s recipe that she got from her mama :) The absolute best recipes always come from my mama and grandma :)
