Healthy Pancake Recipes - Green Pancake Recipe

Oh man these are pretty much my favorite healthy pancakes ever! You can eat them for breakfast, but I also love to eat them for dinner. I am totally a breakfast for dinner kinda gal. I also love adding chocolate chips or fruit to the mix to just change up the flavor and really spice things up :)

Whenever I make them they always remind me of Green Eggs and Ham by Dr. Seuss… oh you better know what I am talking about!

Ok so now that I am way off on a tangent, what was your absolute favorite Dr. Seuss book?

I loved Go Dog Go. That is probably obvious though since I am obsessed with dogs. Like pretty much every dog, so Go Dog Go really hit home for me. I also loved One Fish, Two Fish, Red Fish, Blue Fish. I think I liked this one so much because I always had a fish tank. I grew up with one and it was my absolute favorite. Especially the Angel fishies and the fresh water crabs.

So, let’s get into the recipe for Green Pancakes!

Serves 1 Adult. Makes 6 Pancakes

Ingredients:

  1. 1/3 cup Rolled Oats

  2. Handful of Spinach (don’t use too much spinach or else your pancakes will not be sweet)

  3. 2 eggs

  4. 1/4 cup cottage cheese

  5. 1/2 banana

  6. Optional: blueberries or chocolate chips

Directions:

  1. Pre-heat your griddle to 325 degrees

  2. Add all ingredients to a blender and blend until smooth

  3. Put a bit of butter or coconut spray onto your griddle to ensure that the pancakes do not stick. Make sure that you run the butter all over the griddle

  4. Pour 6 pancakes onto griddle (should be about 3 inches in diameter)

  5. Cook until you start seeing bubbles in the middle and then flip

  6. Cook until golden brown (flipping pancakes ever so often to ensure they do not burn)

  7. Place onto plate. Top with Agave Syrup or your fave syrup.

  8. Enjoy!
