Grandmas Meatballs Recipe - With a Healthier Twist
This is one of my favorite dinners ever! I seriously got so dang excited when my mom would make meatballs. I am not a huge red sauce meatball fan, but when it comes to my Grandmas Meatballs recipe I couldn’t love it more than I do.
Honestly, I always wanted to eat just all the sauce. Seriously like ALL OF IT! Eventually she started adding more sauce just for me :)
Items that you will need to cook this meal:
Serves 2-3 Adults.
Ingredients:
1lb of Grass Fed Burger
Olive Oil
1/2 chopped sweet onion
1/2 green bell pepper
1/4 teaspoon of each: Salt, Pepper
1/2 teaspoon of garlic
2 eggs
brown rice
You can also use brown or white minute rice if you are in a hurry.
1 can cream of mushroom soup
Water
NOTE: I cheat all the time and buy pre-made meatballs from Sprouts :) If you are going to do that you only need to get pre-made meat balls, rice, and a can of mushroom soup.

Directions:
Start cooking your brown rice. Typically it is 1 cup of rice to 2 cups of water. This will take about 30 minutes
Pre-heat your cast iron pan on low
Chop up your onions and bell peppers into really small pieces.
Mix burger, onions, bell peppers, salt, pepper, and garlic with your hands on a meat cutting board or in your kitchen aid.
Add eggs and mix. The eggs will help the meatballs stay together
Section and roll meat ball mixture into 12 balls
Add olive oil to your cast iron pan
Place meatballs in pan and cook until cooked all the way through. Turn every so often to ensure that they do not burn
Once the meatballs are cooked through add 1 can of cream of mushroom soup.
Fill empty cream of mushroom soup half way with water and add water to pan. (if you want thicker sauce do not add the water.)
Simmer fro 3 minutes
Place meatballs over cooked rice and Enjoy!
PRO-TIP: Want to make this one faster and easier? Use minute rice and buy pre-made meatballs in the store. Then all you have to do is cook the meatballs and add cream of mushroom soup. The minute rice takes well…. a minute :) Rather than a half an hour. Doing this will cut your cook time in half.
PRO-TIP #2: I pre-make rice every week as part of my meal prep. This way I have it ready whenever I want it rather than having to cook it when I want it and wait 30 minutes :)
