Paleo Gingerbread Cookies Recipe
You know how during Thanksgiving everything is pumpkin spice? Well for this girl, during Christmas everything is Gingerbread!!! I looovvveeee gingerbread; however, I was having a heck of a time making a healthy Gingerbread Cookie Recipe. This recipe took me quite a few tries, a whole lotta ingredients, and a lot of love. I am so excited to say that I finally perfected it and just in time for all your Christmas festivities!
Ingredients:
- 1 1/2 cups almond flour
- 1/2 cup protein powder of choice (I like this pea protein)
- 1/4 cup tapioca starch
- 2 tsp baking soda
- 2 teaspoons ground cinnamon (if you want them a bit more cinnamony add another teaspoon)
- 2.5 teaspoons ground ginger
- 1 teaspoon ground nutmeg
- 1/4 teaspoon pink Himalayan salt
- 1 teaspoon pure vanilla extract (or vanilla powder)
- 3 teaspoons coconut sugar
- 3 Tablespoons molasses
- 3 Tablespoons real maple syrup
- 2 Tablespoons coconut oil (must be in its liquid form)
Directions:
- Preheat oven to 350 degrees
- Prepare cookie sheet by spraying the sheet with coconut oil spray
- Add all dry ingredients together. Smell and decide if you would like to add more spices.
- Add all wet ingredients to the dry ingredients. Mix well until dough is formed.
- Roll dough out on a cutting board. Make sure that the dough is quite thin. I sprinkled some tapioca starch on the board to make sure that the dough didn't stick. I also rubbed some of the starch onto my rolling pin.
- Use whatever cookie cutter you like.
- Bake for 7 minutes.
- Allow cookies to cool slightly prior to placing them on the cooling rack.
- Serve
