Healthy Cucumber Salad Recipes - Cucumber Recipes

This year i had quite a bit of extra cucumbers and tomatoes from my garden that i just didnt really know what to do with. I've been trying different pickle recipes, but wanted to do something more with my cucumbers. Then I remembered my mamas oh so delicious cucumber salad that she makes during family get togethers! So I quickly texted her and asked her for the recipe.

I immediately made the salad and have made it almost daily this whole end of summer. It’s so yummy and such a great snack or side for your dinner.

Healthy Cucumber Salad Recipe:

Now lets get into the recipe!

SERVES 4

Cucumber Recipe Ingredients:

  1. 4 cucumbers

  2. 1 heaping spoonful of Mayonnaise

  3. 1/4 cup red wine vinegar

  4. Salt and Pepper

Optional:

  1. 2 Tomatoes

  2. 1/4 onion

Directions:

  1. Slice Cucumbers

  2. Slice tomatoes and onions if you want them in your salad

  3. Put into a fridge safe container ( you will want a lid)

  4. Add Mayonnaise and vinegar.

  5. Stir

  6. Add a dash of salt and pepper

  7. Stir

  8. Taste

  9. Add more salt and pepper as needed to your liking

  10. Eat the same day or the next day

  11. ENJOY!
