Healthy Stir Fry Recipe With A Healthy Stir Fry Sauce
Gosh I sure do love me some stir fry!
I started growing a garden and am just so stoked on being able to make a fresh stir fry whenever I want to. If you are wanting to know a bit more about gardening, living off the land, and growing your own food check out all my gardening inspiration here.
Now, last night I made the most delicious fresh garden stir fry. I also made it with a very healthy stir fry sauce as I am trying to eat healthier and get back into shape after having 2 babies in less than 20 months…. ya , you read that right. We have 2 babies under 1 years old. How we are surviving I still don’t know.
Ok so, lets get into the delicious stir fry I made last night and tips on making a stir fry delicious.
Tips on making a stir fry:
Add all the vegetables. The cool think about a stir fry is that you can just keep adding veggies and it typically turns out amazing. The other think I love about stir fry recipes is that you can use all the vegetables that are getting a bit old in your fridge. Once I start noticing that my veggies are aging I make a stir fry with them! It is a great way to use older veggies.
Do not use cauliflower. The cauliflower will turn into mush
If you are going to use zucchini or squash put them in after your onions are cooked. These vegetables only take a few minutes to cook all the way through.
Allow yourself enough time. Stir fry recipes always take quite a bit of time. You have to cook the rice, slice the veggies, cook the meat, and cook the veggies.
Healthy Stir Fry Recipe
Now lets get into the recipe!
SERVES 4 - 6
Stir Fry Ingredients:
1 Zucchini
1 yellow squash
3 small (garden sized) bell peppers or 1 grocery store bell pepper
1/2 onion
2 cups mushrooms
3 small carrots
1 small eggplant
Other veggie ideas:
Snap peas
Broccoli
bean sprouts
cabbage
potatoes (you could use this instead of rice)
1 lb meat of choice
I used shaved beef. You could use shrimp or chicken
salt, pepper, garlic
Butter or olive oil
Sauce Ingredients
1/4 cup Oyster sauce
A splash of Fish sauce
1/4 cup of coconut or bragg liquid aminos
Other:
1 cup of rice
4 eggs (optional)
Sriracha (optional)
Directions:
Start cooking rice as package instructs
turn on pan to get pan warm. Add butter
Slice all veggies
Add all veggies except eggplant, squash, and zucchini to pan
Cook
Once onions are half cooked add meat of choice
Add a dash of salt, pepper, and garlic
Stir
Once meat is 90% cooked add squash, zucchini, and eggplant. Cover pan and let cook. This should only take a couple of minutes
Once all veggies are cooked to your liking turn stove off and cook over easy eggs if desired.
Add sauce to pan of stir fry and stir
Add rice to bowl
Top with veggies
top with eggs if desired
Add sriracha if desired
ENJOY!
Why use Aminos and oyster sauce vs. Teriyaki and soy sauce ?
The answer is very simple. Less salt and less sugar :) The flavor is just about the same (maybe a little less sweet), but honestly if you didn’t tell anyone that you didn’t use teriyaki then they wouldn’t be able to know. It is a great alternative!
